Gut-Healthy Carrot Cake Muffins

Inspired by the Carrot Cake Muffins from Creme de la Crumb, these gluten, dairy and refined sugar free treats make some easy swaps to keep your gut feeling balanced and happy! Makes 6 muffins.


  • ¾ cup 1:1 gluten free flour
  • ½ cup coconut sugar
  • teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • Pinch of salt
  • ¼ cup avocado oil
  • 1 large egg (room temp)
  • Splash of vanilla extract
  • 1 cup finely and freshly grated carrots (not pre-shredded)



  • Preheat oven to 350 degrees and line a muffin tin with paper or silicone  liners.
  • In a medium bowl whisk together flour, sugar, cinnamon, baking soda, baking powder, and salt.
  • In a large bowl combine oil, eggs, vanilla and mix well. Stir in grated carrots.
  • Add dry ingredients to wet ingredients and mix until completely incorporated.
  • Fill muffin liners evenly, about 2/3 full.
  • Bake in preheated oven for 20-22 minutes, or until a toothpick inserted in the center of the muffins comes out clean. Let cool for five minutes before transferring to a cooling rack.
